Like many of you, I started my journey in the ice cream industry with little prior knowledge. My professional background was in fine dining—in hotels, restaurants, and bars. Exhausted from the journey, I briefly spoke with one of the founders of Nissei NL (Win Equipment), Rob. We discussed the machines and their features. Though it was a short conversation, it left a lasting impression on me. I returned to my hotel, but the thoughts of what I had seen stayed in my mind.
